Rude Mama brings the spice and the flavour

A tasting of some can't-miss hot sauces, and a recipe to go with them.

One woman in attendance at the Canadian Food Innovation Network was business woman Vian Nguyen who, despite the name of her enterprise, was anything but a Rude Mama.

She had samples of all four of her hot sauces: mango, pineapple, passionfruit and original, for attendees to try and once I’d got my gums around them she agreed to send me a gift set.

Rude Mama sauces have varying degrees of heat but they’re primarily all about the flavour. Rather than the chilies masking the fruit, the fruit actually stands out and takes centre stage for a well deserved bow. It speaks to the refined palate of Nguyen that she found the right ingredients to deliver such a thoroughly clean label product.

The product is first rate and so is the packaging and accompanying marketing copy. This makes it even easier to proclaim that this is the finest hot sauce I’ve enjoyed in years. Opening the jar you’ll immediately feel that this sauce is so fresh, it feels as if it’s just been made and all without preservatives. It’s so good that I was inspired to throw together a vegan recipe for your enjoyment.

Ralf’s Peanut Rice Noodles

Once these delicious sauces arrived in the mail, I needed to put them to work and threw together this super quick and tasty vegan dish. 

Ingredients:

  • 1 handful of rice stick noodles (enough for one person)

  • 2 tablespoons of your favourite peanut butter

  • 1 tablespoon Rude Mama pineapple hot sauce (more if you want it hotter)

  • 1 teaspoon soy sauce (tamari if making a gluten free version)

  • 1 teaspoon vegetable oil

  • 1 scallion (chop green and white parts separately)

  • ½ cup vegetable broth

  • Salt to taste

  • 1 extra teaspoon Rude Mama pineapple sauce to dress the dish

Preparation

  • Bring two cups of salted water to boil and add the rice stick noodles. Cook until al dente. Strain and set aside.

  • In a separate saucepan add the vegetable oil and white part of the green onion. Sautée until lightly browned.

  • To the onions add: peanut butter, Rude Mama hot sauce, soy sauce and vegetable broth. Simmer on low for two minutes and stir until all components are mixed.

  • Add the cooked noodles to the sauce and heat through for another minute.

  • Place noodles in a serving bowl and top with a teaspoon of Rude Mama pineapple sauce and the remaining green parts of the scallion.

  • Salt if necessary.

This dish should take all of 10 minutes to prepare. It’s delicious on its own or can be served as a side dish along with chicken satay or grilled lemongrass-ginger shrimp.
